Had a 5 gallon carboy of apple cider, done fermenting and was resting. About 2 days before bottling I noticed that the airlock had fallen off and looks like a small amount of mold developed on the top layer of the juice. I quickly racked it into another sanitized carboy, leaving the top couple inches. Is this batch ruined? Should I wait and see if mold redevelops? Or is this batch kaput?

Ben, does it still taste good?
Mr. Palmer says:

"Mold: A simple case of mold.

Cure: Mold can usually be just skimmed off with no lasting effect on the beer's flavor. Withdraw a sample of the wort with a siphon or turkey baster and taste it. If it tastes foul then its not worth keeping. Otherwise the beer was probably not harmed. Infections in beer caused by molds are not dangerous. Be meticulous in your sanitation and you should not have any problems."
