I started it from a commercial bottle and it’s been 2 weeks.
I’m not sure if this is the right look?

From the side it looks good but the top is scaly,mine are smooth. That's really dark , might be to rich. 2 weeks is enough time to take a sample. I don't see mold. When I'm doing a new ferment, if it passes the sniff test I take a pH sample and if it's below 4.3 I give it a taste. My booch is ~pH 3. The top does look weird though and maybe someone else has experience with it.
