So my bench is all set I'm itching to dive in and get my first brew going but...

Today it's like 14 degrees(C) outside here in Wellington NZ and likley to drop to 9-10 tonight If not a bit colder. I am unable to put the fermentor inside(rolls eyes) and unable to heat my garage. Is it going to fail should I wait for warmer weather?

Thanks in advance,
George

Depends on your yeast. Are you making a lager or an ale? What is the recommended temperature for your yeast? I've had a couple batches that were started too cold and it took them longer to start flocculation, which is not ideal. I've also kept some bottled beer at a cooler temperature, and it took MUCH longer to condition. So, check your yeast, see what it recommends.

Sounds like it's "Lager Time". Maybe not 14C is about 57F. I don't know about you but it's going to -16C here tomorrow. Lagers do well at 10c aka 50F. Is it too cold? Sounds like my "Favorite temp for the house"

Wrapping the fermentor in something probably won't help unless there's some sort of heat source inside there with it. If you have a portable heater or something that might work. The trick is maintaining that temperature for the duration of your fermentation. Constant changing temps, or the wrong temp, could mess up the taste or slow the process down. If you do try to keep it at that temperature, it might just take a long time to ferment... or it might not ferment at all. Of course, that temp on the tin seems high for a lager...
