I recently did a 1gal test batch that turned out awesome.

I'm ramping up to 5gal and was wondering what it should be classified as. Hard Cider or Apfelwien.


5gal fresh pressed apple juice
3.75lbs wildflower honey
1.5lbs dextrose
Nottingham dry yeast(2 packets)

The test batch had 1.090 OG and 1.009 FG.
 
I would say that is still closer to a cider rather a cyser. Cyser tends to have like 8 lbs of honey in it and uses wine yeast to ferment up to those higher lvls of alcohol....
 
Steep some crystal grains in some water and add, bet it will be even better.

BTW, you technically have a cyser but the taste is the best description.
 
Well, I tasted one last night. No carbonation, slight pffft noise. Definately needs more time to carb. I didn't remember to stir up some trub when racking.

Decent apple flavor very strong alcohol taste. I may try another yeast so it finishes a few points higher.
