I have read that the ph in beer keeps anything dangerous from growing.

What about about mead?
 
Ur fine dude. Any fruit, grain, etc. Can ferment safely (as long as its not poisonous to begin with) even milk (wierdly enough) in some circumstances.
 
Honey is fairly acidic and will drop your ph a bit too. Also in 4 years of mead making I have never heard a story of anyone getting sick from their mead. And stories like that would spread like wildfire.
