I am about to start using Irish moss but I'm not sure it's necessary on my next two brews, stout and saison. I am almost positive it's pointless in ts stout because of the darkness of a stout but I could be wrong. Saisons tend to be cloudy if I'm not mistaken so is there really any point?

I'd still use it on the stout. In my personal thoughts, I believe a stout can be cloudy just as well as an amber, for example. The stuff isn't that expensive for what you use, so I just throw it in everything I brew anyway.
 
I have always used Irish moss it helps guaranties a clearer beer. I have noticed a crisper test to my beers and less Yeastie taste in the final product. There is very few beers that you would want to skip the Irish Moss like wheats ect...

Good point on the wheats. I don't like em, so I don't brew em, but I'm thinking good advice anyway.
 
Used it on my stout and wow what a difference! Im pissed I haven't used this stuff before!
 
Yeah like mentioned above, even in a dark beer you can tell if it's cloudy or if it's clear. I add some kind of finings to most of my batches. Cheers
