I am looking to brew a really juicy IPA within the next couple weeks and need some advice fine tuning my recipe. As of right now I plan on using the following:

WY 1056
2# flaked oats
2# pale LME
8# extra light DME
2oz Simcoe - 60 min
1oz Citra - 30 min
1oz Galaxy - 15 min
1oz Cascade - 10 min
1oz Citra - 5 min
1oz Galaxy @ flameout
1oz Cascade & Citra - dry hop 5 days

Can anyone shine some light on how this may turn out?
 
The oats are... strange to me in an IPA. They will add a soft mouth-feel & some haziness, but I can't see much else. I'd replace them with wheat, as it can bring out the "juiciness" in some hops, like most of what you are using.

If you are dead-set on oats, I'd use only a pound and replace the missing pound in the grist with either wheat or maybe something like Vienna.

Of course, I am assuming you don't mind some mashing. If you are only steeping, then I am at a personal loss for advice, and could only say "Go for it!"
 
I think the flaked oats would be fine to improve the body but I would say you could cut that 2# in half at least.
 
I love oats in an IPA. It gives it a creamy mouthfeel that goes well with citrusy hops. However I am pretty certain that oats need to be mashed and will only contribute haze if just steeped
 
Also I think two ounces of simcoe for bittering is too much. If it were me I would move 1.5 ounces of the simcoe to flameout.
 
I'm with chuckthebutcher all the way. Lose the oats and put most of that Simcoe at the end. If you want to add steeping grains, any of the caramel/crystal malts would be OK, as would biscuit. A pound (or less) of biscuit would be a nice addition, in my opinion!

Drop the Oats (really don't go, and need to be mashed anyway).

Add a pound of table sugar to help dry it out (especially since it is an extract batch).

Maybe steep half lb of crystal if you want some malt and sweetness, but not necessary.

Find some more neutral hop for the 60 minute addition - save the Simcoe for the end. Citra at 30 is not really doing anything. Use a neutral hop for the main bittering addition at 60, and then save all the rest for 15 minutes and under.
