OK, I've done an IPA before but it was extract, and pure cascade hops .... it was pretty good, but definitely room for improvement. I cam eup with a new recipe, but would definitely like some input.

What about something like this:

For yeast I was thinking along the lines of S-05 or WLP008

For reference the hops I have on hand are Centennial. Columbus, Willamette and Cascade.
 
Stick with the C hops for an IPA, and for most IPAs, I usually do an oz at 60, 20, 10, 5 and an oz for dry hop. I would never do an IPA without dry hopping. Never used WLP008, and love us-05 for nice clean flavor and great attenuation. Play around with the numbers and shoot for 1:1 or higher BU:GU ratio (bittering unit to gravity unit). The recipe I brewed today was 1.1 on the ratio, have brewed it several times, but never with all Citra hops :).

Edit: I like your grainbill. Dont over-do it, keep it simple.
 
Yeah, I was debating on using Willamette or not. I definitely like that flavor, and I like the idea of combining it with the typical American C-hops perhaps a bit of a combo between an IPA and an strong citrus flavored american IPA.

As for the yeast, I like the WLP008, it does leave it a bit sweeter than S-05 or WLP001, so I'm not sure if it would work well or not.

And as for the dry hops, I definitely intend to dry hop, I forgot to add them in the recipe though.
 
OK, I had originally intended to make an Amber. I alrady have the grain bill waiting to be crushed. I am not sure if I should hop it like an Amber, or just go for an IPA. This is what I would do for an IPA .... I haven't added the dry hops yet, but I plan on adding an oz each of Willamette and Centennial.


What do you think. For the Amber I would drop the bittering addition to .25 oz each and cut the 5 minute addition and the dry hop.

2 pounds of crystal is too much for an IPA. I'd go with the amber with that grain bill.

I've never used willamette in an American beer, except for a Fat Tire clone, but I know you wanted to use them in an IPA. I can't help with the hopping, sorry!
 
Yeah, like Yooper said, WAY too much crystal. The crystal 90 should go away, subbed for more munich or vienna for an IPA. Or, if you are going for an amber IPA, use like 0.25 lbs. crystal 90, and cut some of the crystal 20.

Hopping looks good. Maybe add some small additions at 20 minutes (I am a huge hop-head, though ;)).
 
I'm fairly certain I've had commercial IPA's that combine citrusy hops and wilamette, but I can't think of what ones. I plan on brewing one with almost the same hops.
