Hello!

I'm actually an Australian, living in Sweden, but hello from Sweden anyway.

I stumbled across this video about a week ago on youtube by CS Mead and More:

I had no idea making mead was so simple. Anyway, just a few days later and I've got two gallon jars full of mead must. In one of them I followed their advice exactly, and in the other one I did a little experiment for myself using less honey (I think I'd prefer it less strong), a different type of smokey black tea and I added some chilli and cinnamon just to see if anything would happen. Obviously I have no idea what I'm doing but I like experimenting.

Welcome! I have a couple gallons of must that I experimented with - four weeks of fermenting as of today. I'll keep you informed of my results.
