Thought I would share my recipe for hop-pickled eggs. You can fudge the numbers a little and/or substitute ingredients, but the general recipe is:
36 hardboiled eggs
2 half gallon mason jars
5 cups of water
2 cups of malt vinegar
2 cups of apple cider vinegar
1 cup white vinegar
1/2 cup salt
4 tsp mustard seed
2 tsp dill seed
2 tsp chili flakes
2 oz sorachi ace hops
Boiled the salt/vinegar solution for 3 minutes with about 6 hop pellets before adding the hot solution to the jars containing eggs and herbs. I use two half gallon canning jars and split the dry ingredients in half between the two. The eggs will have good flavor in 3-5 days but will have maximum flavor in about 2 weeks.
