I'm doing the df IBA as I've seen it (extract plus grain), but replacing the warrior (60 min) with colombus and the vanguard (0 min) with 1/2 simcoe 1/2 perle. Obviously this is going to be a different beer. Any advice? Maybe more brown sugar to balance out the hops?

I think you are fine with those hops, just don't go too overboard with Simcoe. You don't really need too much of the grapefruit flavor in there, what you going for is more of a "bitter chocolate" taste, as opposed to a "sweet chocolate" taste in English Brown. I use all Centennial hops in my India Brown and it works pretty well.

thanks, i think i'll do all the perle in the brown and all the simco in the dipa. i think u hit something on that grapefruit taste. i dont want that in the brown at all.
