Hello Everyone,
I own a brewery in Eastern, TN and have been top cropping reharvests for about a year now. I brew with London III and have only gone up to 6 reharvests before I start fresh. I will pitch into mainly hoppy beers and top crop 3 days into fermentation.
In terms of the recipe, I mash at 150-152F, get a mash pH in between 5.2-5.5
2 Row, Flaked Oats, Carafoam, White Wheat and Acid Malt for pH adjustment with an hour long boil, whirlpool addition of 1-1.5 lbs per BBL of hops and the usual oxygenation through the wort chiller.
My question is this: Why do I sometimes have a krausen on some reharvested pitches and not on others? Sometimes I have been able to get to 6 reharvests, but this latest pitch only got me one reharvest.
