Got this beast done this morning.
Did a partigyle and made a Chinook IPA out of the second runnings. Ended up a little high on my volume but with the addition of a little DME my gravity was right there.

This wort is like syrup. :D I can't wait for the finished product.

I got that beast brewed yesterday morning, and she's chugging along nicely in the freezer o' fermenting. I even had to whip up a batch of **** You Ike PA to keep it company.

That's awesome. I just took a hydro sample of mine to see how things are coming along. I started at 1.128 and finished at 1.038 which gives me an ABV of 11.79%. The flavor is great with a lot of dark fruit character as well as some nuttiness in the background. The hops are a little sharp but should mellow with age. This is going to be one dangerous beverage. Even with such a high ABV, the alcohol wasn't hot at all. I guess the sweetness takes a lot of the edge off it. Man, I'm psyched. I had intended to transfer it today but I think I might let it set on the trub for another week.

Anybody oaking theirs? I've been thinking about trying it and this seems like the perfect beer for it.

Yes I will be. I have the cubes soaking in bourbon right now.

Anyone have thoughts on how to minimize the dark fruit and plum/raisin characteristics of this beer? I want to emphasize nuttiness and hoppiness, but minimize the fruit components, as that's the one thing I typically don't like about Barleywines, Old Ales, etc.

My first thought is, cut the Special B entirely, use less Cara 120, and fill in with more Cara 40 and Cara 60. Perhaps up the Munich content? I have boatloads of Pale Chocolate and Coffee Malt and Aromatic Malt all sitting around.

I hope to have the Chiller built by next weekend (Zoinks, how am I gonna get that done?!) so that temp control isn't an issue ... If I don't finish it in time, well, then I might be just praying for a really cold week! :(
 
Well, I went ahead and transferred triple9 to secondary sans oak as per my original plan. I'll probably brew another sometime and oak that one. I drew of a raw (uncarbonated, unconditioned) pint and am currently enjoying it and, let me tell you, I'd better get friggin' safe to keep this stuff in because it's going to be damn near impossible to keep myself from dipping into it. I can only imagine what it's going to be like in a few months come shipping time.
 
I'm doing mine either this coming Saturday or Sunday. I was just waiting for my "starter" (yeast cake from Pale Ale) to finish up. I'll be kegging that right before I start brewing.

My logic is, that with a year to age, two or three weeks won't make a big difference in end product. Me rushing to get it done, and in the process stressing out, and in that process, making huge mistakes - that WILL make a big difference in end product.

Plus I'm tryin' to get my motorized grain mill up and running first. I don't look forward to crushing this grain bill by hand, even only doing 4 gallons. (4.2 actually. Just trying to keep my preboil volume under 7.5 gallons so I don't have to use the Keggle.)
 
Man if it's not one thing it's another, I'm really trying to get this thing brewed but something more important (to SWMBO) keeps coming up. Maybe this weekend though, hearing of all you guys brewing this is making me jealous :rockin:

Actually I'm doing mine on the 29th and the second runnings will be my 10der Mild. Two swaps one brew day:mug:
Brewing mine this Sat, not sure what the second runnings will be yet.
 
When are you guys going to brew?
We are getting pretty far into September.........

I'm looking at 10-11 at around noon (12) just to complement the 9-9-9 aspect of this brew.

But I hope to have it brewed sooner. Lions have a bye this week, so it's as good of a time as any I suppose.

You might want to wait one more week and brew while they are losing.;)

Those of you that have brewed this, what sort of efficiency are you getting? I'm normally getting 75%+ for a typical beer so I figured 65% might be a good estimate for this (and that's what the original recipe was based on). However, seeing how much some of you are having to boil down, I'm wondering. I'm shooting for a 3.75 gal batch size so i can end up with about 3 gallons kegged/bottled. I was thinking I'd do a 90 minute boil, which means I'd be starting with 5.36 gallons pre-boil based on my typical 15% boil off rate.

Just wondering if I'm going to come up short on the OG since so many are doing 2 hour plus boils.

52% for my barleywine. I did 2 sparges to get about 7 gals which I boiled down to 5.5. I then sparged 2 more times for about 7.5gal pre-boil for my "small" beer which resulted in an additional 25% efficiency. Over all I ended up a little below target at 77% (target 80%). Working out all the expected gravities, sparge volumes, final volumes and efficiencies was tricky. :)
