Hello i am a complete noob to homebrewing and this Forum. I brewed my first batch. A kit IPA which turned out extremely well. Which in turn made me want to start experimenting. I recently had a Double White ale from a local brewpub. It picked my curiosity as to techniques for extract brewing double ales of various styles. Any help is appreciated.

Big yeast pitch
Aeration
Temp control
Time
Patience
Watch ferment temp big beers generate some heat and will cause your yeast to produce flavors unwanted in some styles...Unless your shooting for Belgian then slowly work your temp up.
 
A great resource for big beers is Extreme Brewing, by Sam Calagione. He's the owner of Dogfish Head Brewery, and he makes some insane brews! It may spark some ideas for you.
