Hello fellow brewers,
Just tasted my first home brew after about an 8 year hiatus from the hobby. Man, wish i had never left! While the brew was a little thin (was over my final volume by about a quart) and it was a little green cause I only bottled it a week ago, boy was it good. No off flavors or chill haze. I left it in the primary for a month, can't express how important this is. Compared to the beers that me and my college roommates rushed through the process 8 years ago, it's is so much better. This could be for many reasons, but I'm convinced giving the yeast more time to clean up after itself is the primary reason. Can't wait to taste the other three batches I've got in fermentors right now. I'm celebrating by having a Bell's Expedition Stout that I've had cellared for a year (want to give my beer more time to mature). Cheers and happy brewing!
