-Cascade
-EKG (if I had to pick one hop, this would be it)
-Northern Brewer (I could substitute Cascade for this and free up another hop, but as is, I use it a lot).
-Hallertau (weizens in summer)
-yet to be decided - I'm always looking for something new
 
Summit - my #1 favorite hop
Amarillo - approaching perfection
Simcoe - getting there
Sorachi Ace - it's like putting a lemon in your beer without putting a lemon in your beer
Willamette - universal Euro hop
 
I was watering my hop garden the other day and thinking about what would happen if I could only brew with what i grew myself. I currently have 5 varieties, Nugget, Chinook, Cascade, Centennial, and Sterling. Thankfully we can use whatever we can get our hands on but....

If you could only brew with 5 varieties of hops for the rest of your life what would you choose? Please put the variety you like best as #1 and so forth.

In this alternate reality, you can drink whatever beer you want, including others homebrew, but no brewing with any other hops (ie: no tradeing hops).

Thumbs up to all the Centennial love. Can't get enough of that tangerine goodness.

Then why not just use warrior?
 
I didn't really realize it until now but in the past two years I believe I have only used three hop varieties (with the exception of one collaboration brew I did with a commercial brewery).

I suppose if you add Saaz in there then I would be happy enough to brew with just those 4.... who needs 5 ;)

Then why not just use warrior?

It's similar not exactly the same, I prefer the taste over warrior, I find it to be for lack of a better explanation "more intense" in the orange flavor and aroma. I sub Warrior when Summit isn't available though.
 
Yikes, variety is the spice of life... only 5 hops... Well, here are my top hops.

1) EKG
2) Cascade
3) Hallertauer
4) Perle
5) Willamette
 
1.Centennial
2.Hallertau
3.EKG
4.Magnum
5.Simcoe

I figure I could brew a decent example of just about anything with these 5 (except maybe pils but I don't do many lagers).

Interesting. My absolute favorite that I listed ended up being the most popular, and though I'm a bit surprised at that (I knew it would be popular, but I didn't figure it'd be MOST popular), obviously I can understand why! Centennial is just amazing.

And perhaps even more interesting is that, despite my absolute favorite coming in #1 with 20 votes, EACH of the other 4 varieties I chose to "keep" only have one other person who also chose them (2 votes each).

Simcoe and Centennial for all the american style ales (wet, fresh centennial is the BEST!)

After that? Man, I dunno, just pick three fancy Euro hops so I can make a nice Quad.
 
#1. Willamette - for its versatility in almost all ale styles
#2. Columbus - My go to high alpha bittering and has the most unique aroma
#3 Centennial - my favorite flavoring hop for the spicy/citrus character
#4 Cascade - This one to me, is all citrus and an integral hop for american pale and india pale
#5 Chinook - Arrogant Bastard Clones - need I say more?
