Hey guys, I picked up a brewers best red ale kit beer the other day, been thinking about adding some spice to make a pumpkin or winter brew, any suggestions on additives and when to add them and for how long ? Thinking about all spice, cinnamon, pumpkin pie spice. Thanks, Stan
 
Sounds fine. Use cinnamon, clove, nutmeg and ginger in the boil. Go mild on them. When the beer is ready to bottle, take a taste. If the spices seem low, add 1/2 tsp of allspice dissolved in a couple ounces of vodka. If it seems, like, seriously low, increase it. If it seems close, add 1/4 tsp. Etc.

Allspice is a multiplier for your earlier spice additions. Very difficult to overspice with it on the cold side without being stupid.
 
Roast some pie pumpkin, put it in the brewpot, and add typical pumpkin pie spices at the end of the boil, go light on the spices.

Let the chilled wort sit 1/2 hour, and rack the beer off the top of the sludge in the kettle.

Pumpkin beer rocks!
