Hey gang, new to the form. I am looking to brew a scotch ale, and I found a recipe that calls for Wyeast 1728 Scot ale yeast. The recipe states:

primary, 5 days 62-70. f
secondary 12 days 62. f
tertiary 40 days 34.f

What I do have to offer is a range of 65-70.f.
Can I get away with this range with this yeast without changing the intended characteristics of this ale?

Is that the ambient temp, or the actual temp you expect the beer to be at? During fermentation the yeast can produce quite a bit of heat, especially in big beers. Fermenting above 70 can lead to a harsher/fruitier flavor (something big beers often have a problem with anyway).

I have a big beer fermenting at 55 ambient with 1728 at the moment and it is going gangbusters. If you have a big tub you could fill with cold water to keep the temp down that would be a big help.

I also would not suggest racking a beer after 5 days. Just leave it in primary until the fermentation is completely finished. Racking early can cause all sorts of issues and really offers no benefits.
