These are my ingredients on hand...

15Lbs 2-row

1Lb Honey Malt

1Lb Carapils

1Lb Crystal 60

2 oz Cascade Pellet Hops

1 oz Amarillo Pellet Hops

2 oz Citra Hops

1 oz Chinook

I also have some sweet orange peel but not sure it would go well here.

I'm looking for suggestions on what to use on this, my first thought is leave out the Honey Malt but I've never used it before so not sure.

I'm brewing in the morning so hopefully someone is busy on the forums and will give me an idea....

When in doubt I just make beer. What I mean is, when I don't know what to make I usually just go with one malt, one or two hops, and make something simple and pleasant. For instance, two row and Centennial with perhaps another hop for bittering. Maybe Chinook for bittering? Low to medium OG (topping out at 1.050), with part of the experiment being mash temp and all that stuff too. I would keep a BU:GU of around .50 to .65. When I do this I do not go super hoppy, unless I just really want it that way.

Mash @ 152 for 60 min.

1 oz. Chinook @ 60
Cascade or cascade + amarillo for flavor and aroma additions.

What yeast do you have on hand?

I would probably go with something like : 11lbs 2row , 12 Oz crystal 60, 8 Oz cara-pils, 4 Oz honey. Mash at 152. Bitter with 1 Oz Chinook , 2 Oz cascade at 10, and 1 Oz Amarillo at 1 min. OG 1.065 53.5 ibu. Good luck and have fun, you will make beer.
 
So many great ideas already. I agree, I will definitely make beer. By the way, doing my first brew on my new electric setup. Tested it all out tonight and it works fantastic!
 
11.5 lbs - 2 Row
1 lb - 60L
.5 lb - Carapils

1 oz Chinook - 60 min
1 oz Amarillo - 15 min
1 oz Citra - 0 min
2 oz Cascade - 5 days dry hop

I brew at 5.5 gallons, so the numbers might be different, but I came up with 1.065 OG / 48 IBU's. Mash at 150. Plenty of citrus between the amarillo, cascade and citra. I wouldn't use the orange peel.
 
Sorry for the slow response.

Here was my final recipe:

12 Lbs 2-row

.5 Lbs C-60

.5 Lbs Carapils

1 oz Cascade @ 60

1 oz Citra @15
1 oz Centennial @15

1 oz Columbus @5

Dry Hop with 1 oz Citra for 5 days prior to kegging

I have to admit that I started drinking to early and made a 2nd batch of Centennial IPA, I got a bit drunk and not really sure what order I followed. My friends came over early in the morning and we significantly reduced my bottled inventory...

Depending on how this one turns out I'm going to try something new and brew a 5 gallon batch, split it up into two 2.5 gallon fermenters or five 1 gallon fermenters. We'll see how they all turn out so I can pick my favorite and brew on...
