hello, I'm brewing an american wheat ale, quick question. When I started the gravity was 1.036, waited for about 2 days nothing happened-nadda.... Got inpatient because of the new recipe, I added a second pitch and bam my gravity dropped to 1.011 in less than 2 days. The thing is its a 2 week ferment and i'm roughly 5 days into it. Did I just ruin my batch? :(
 
It will most likely be perfectly fine. Once it gets going, fermentation can happen pretty fast. Let it sit for the full 2 weeks anyways (and maybe even a little longer if you can wait), the yeast need time to clean up any off flavors they produced during fermentation.
 
No.......you are ok. 2 days is fast though. What temp did you ferment at? I am assuming that you are saying it is done because you don't see the airlock bubbling. There are still things going on in there. You need to get a hydrometer to truly know if fermentation is done. I did the NB American wheat kit and it was through bubbling in 3-4 days. You will probably be ok. Read some of the post in the fermentation forum. Good Luck. Watch your fermentation temps....if they get too high it will ferment out faster but leave you some harsh flavors
