I never thought this day would happen

I absolutely feel your pain. I haven't brewed since November, which is the longest time I've gone since starting in 2007.

Combination of being busy, crappy winter, and then getting influenza followed by pneumonia.
I'm starting to feel better and getting the itch to brew, going to do a couple quick low ABV beers to get the pipeline growing.

I knew you all would feel my pain. LOL
Oh yeah, I'm quite sure we've all been there, possibly more than a few times, too.

In my early brew days, I came into the habit of siphoning beer out of the carboy, for tasters. ;)
My wife would ask if I actually had the intention to bottle any of it. :D

Oh my. No beer? My pipeline is currently at 25+ gallons of ready to pour beer still not on tap. I started brewing 10 g batches for everything, which led to a different bummer... I don't need to brew anything today - I got it covered!

But I love brew day... So I changed the procedure. Stouts, pilsners, lagers, get the big batch (10 g) treatment. All the other styles I just make 6-7.5 g (for std. corny keg to bigger sized kegs(6-6.5 g)

Ughhh, yeah I've felt that pain, though I almost never run out, I brew big batches. Over the past couple years my wife and I have gotten involved in some brewfest type things and some other events that we pour our beer at. Last year we went though 4 kegs at one weekend event which was only a few weeks before our annual pigroast where we polished off another 4 kegs.. so I typically only run out after things like that.. but hey I guess that means my beers are good.

Have a good recipe? I’m game!
the absolute easiest way to make quick cider and is always foolproof. is to just pour as many gallons as you want of store bought juice onto a fresh yeast cake from a beer you just racked. about 2 to 4 weeks later you will have good cider.

otherwise if you dont have a fresh yeast cake this is also foolproof but you need yeast nutrient.

back sweeten in the keg with 1/2 cup of table sugar dissolved in a liter of any juice you choose.

i have done blueberry cherry pineapple, apple, even white grape they all come out very good.

peach and pear juice dont work good for some reason

i have also backsweetened with everclear fruit tinctures mixed with sugar . (like muddled pitted cherries in everclear for example. )
that also works well.

I had that happen to me a number of years ago. The good news about owning a keezer with taps and a 20 lb. CO2 tank is that I just went to BevMo and bought a 5 gallon keg of Swami's to hold me over. Tasted great on tap. At the same time, I was shocked at the price of the beer not to mention the keg deposit. Made me realize how cheap my beer is to make (ignoring the cost of all the equipment I've bought over the years).

One of my top cider recipes uses peach nectar (such as is sold in the Hispanic grocery section) and cheap apple juice. I mix 1:3 nectar:juice with a small amount of tea w/ yeast nutrient. I like the resulting drink still or lightly carbed, sweet or dry.

thanks i will try this do you add pectinase.

No, what I have experienced is that the cloudiness settles out within 3weeks and leaves behind a very clear upper layer for bottling.

Come on over! I have an 8 tap kegerator with some great beers. My problem is the polar opposite...my friends drink all my beer but I had a Thursday comedy show to go to so my usual Thursday group of beer drinking friends were out of luck, Nikki Glaser was worth it. But I brew weekly and now all taps are taken and I have 4 kegs in my lagering freezer. So I have to bottle the residual of one of my kegs just to make room to allow another brew day...
