If you're up for all-grain you could make a schwarzbier or a maibock. You could do a munich malt heavy small stove-top BIAB like that. Maybe even an oatmeal stout with an english malt and flaked oats.
Otherwise you could get some dark or amber DME and the right steeping grains and you could make a stout as long as there aren't any adjuncts.
