I'm trying to do a dunkel with a maroon color.(SIU Salukis Team Color)
How do I get more red and less brown.

Current Grain Bill: .33 lbs. American Chocolate
1 lbs. Chrystal 40L
10 lbs. American Pale 2 Row
 
Don't know about your coloring issues, but good to hear from a fellow Saluki! I went there for grad school in the early 90's. Had plenty of good times there! :tank:
 
No, I got started late. I'm still a noob, only about 10 extract kits and a couple partial mashes under my belt so far. Plenty of early research and Pinch Penny and the Cellar though!
 
If you go with the roasted barley to add a hint of red use Am. not British as the American version is lower lovibond and less potent, it's easier to over do it with the Brit. version.

Also if you don't have access to beerSmith etc. use the calculator at tastybrew.com.

Just check out the Color malts at midwestsupplies.com etc.

Ps I brewed a Crimson Ale for my Crimson Tide, it was an Irish Red. It's in the recipe database, color was a bit dark though... thus the Am. vs Brit. Roasted Barley comment!

Go all grain! After finding this site last year I switched to all grain, and let me tell you it's well worth it. I wish I switched to all grain 10 years ago.
Download Beer Smith and play with it if you haven't already. It opens a whole new world to brewing many new types of beer, and the taste is superior to extract.

Thanks for the feedback.
I've been tweaking the recipe with both BeerSmith and TastyBrew.
I think I'll try adding .20 lbs of the Am Roasted Barley next time and a little less of the chocolate and crystal. I'll let you know how it turns out.
