My Question is:

Why do people cover the jars with a cloth and elastic and worry about bad stuff like fruit flies, bacteria and mold, instead of using a proper lid and air-lock?

Is there some reason I shouldn't use an air-lock?

Thanks in advance!
 
I'm not an expert, but from what I've read, kombucha needs oxygen, so an airlock is a bad idea.
