So, we all talk a lot about sugar here. When we were little we loved sugar because it could be used to make candy and baked goods. Then we hit about 16 and we loved sugar because it could be used to make the beer and wine we were sneaking at Easter (and the stuff our Jewish friends were drinking at Passover with their parents's sanction... I'm still just a little bitter about that). And now I have discovered two more awesome uses for sugars... masserating and curing.
1) Whilst making jam for my wedding favors I was instructed by the recipes to use what seemed to be an inordinate amount of sugar and to allow the fruit to sit in it overnight. Imagine my surprise when I found the fruit the next morning literally bathing in their own juice. The sugar had drew out juice, and pectin, and allowed the fruit to achieve spiritual creaminess.
2) Gravlax. Yes, salt plays a role here too, but sugar is the unsung hero. When you mix a 2:1 mixture of sugar and salt and then apply liberally to a filet of salmon, seasoning heavily with cracked pepper and dill, over time you will have a cured salmon that is, in my opinion, superior to smoke cured salmon. You will impress your inlaws and much will be right with the world.
