Wondering if anyone uses Cascade hops in a bemoan wit? Thinking of making a hybrid with the following:

2 row
White wheat
Flaked wheat
Oats
Cascade at 60 mins and 15 mins
Orange peel
Coriander
Not sure on yeast maybe S-05? I may not get the spicy flavor profile though if I use S-05???
 
The cascade should be fine. You won't even taste the 60 min addition. The yeast though I would ABSOLUTLY go with a Belgian yeast and not the 05. Otherwise You will not have that Wit character.
 
What type of yeast would be good but not overpowering flavor as I do t want to take away from the spices I am adding?
 
The forbidden fruit strain was pretty interesting and may work well with cascade and spices for sure.
 
As long as you add the spices to the secondary after primary fermentation is complete then the flavor should come through.... Sooooo any belgian strain would work. Choose your favorite.
