Tasting day is my favorite day. It makes all the work of cooking the mash, cleaning the crap, and worrying about all the yeast stuff worth it. I am a farmer. So I have very little time in the spring and summer for Brewing. This year I decided to brew all the beer I would need for an entire year during my winter lull. About 13 recipes. Today was tasting day for the first Stouts I have ever brewed. I... Love... Home-brewed... Stouts! So good. Thanks all of you who contribute your information to these forums.

Well, I lived overseas and fell in love with European beers. Most of what I make is either German or British or Irish. Dortmunder is my go-to. I also like an old speckled hen clone recipe from Austin homebrewers and a British best bitter from DeFalco's in Houston. The Stout recipes are from Austin Homebrew one is a Murphy's clone and the other is and oatmeal stout. I have modified a brew in a bag type process where I place the bag into a strainer and sparge with 170 degree water as fast as it will come out of my hot liquor tank. I also have been experimenting with letting the Wort cool naturally after the boil both outdoors and indoors. My efficiency is hi and I haven't experienced any off flavors as of yet.
