What's the best way to keep the humidity down inside the Kegerator?

In the past I've had a lot of ice/frost build up due to humidity freezing. Is there a way to help keep this down and slow this from happening? I feel like I have to defrost the fridge after every few kegs?

If you have excess moisture inside, that almost certainly indicates an air leak somewhere. Maybe inside the tower, maybe the door seal isn't sealing properly.

I had a keezer that worked pretty well, but i was always dealing with a certain amount of water on the bottom from condensation. I checked the lid seal, couldn't find any particular place where an air leak would admit warm, moist air that would then condense.

That keezer died early this fall (moment of silence....). I built another, and guess what? On this one, no water in the bottom, no apparent condensation.

That's a huge bonus, of course, but what must be different is the new one must be sealed better, either at the lid or the collar is more solid or something.

So while a dehumidifier will help, you might also check the seals and such. You're getting air inside from somewhere, and it's not just from opening the door occasionally.

My 1947 Westinghouse has some build up after several months...I don't open the door unless I need to change a keg or adjust the regulators...have not defrosted in many, many months...

My other two 1946 & 1947 fridges get a lot more door action...ice build up in significantly more...

I would look for an air leak...or are you opening it up too often?
