How to make alcoholic jun kombucha?

Hi everyone,

I recently came across an alcoholic jun kombucha called Wild Tonic: https://www.wildtonic.com/

Can anyone shed light on the process by which this product is made?

Is it just a case of leaving the alcohol within the kombucha or is anything else done to it?

Let's see...
You need an appropriate amount of sugar to produce that amount of ABV. You need a yeast culture that can ferment to that level. You may need to add yeast nutrient. You need to prevent the alcohol from being turned into acetic acid. A hydrometer can help you determine an approximate ABV level.

Oh, and you need some attractive smiling models to stand or sit in fields of wheat and wildflowers while holding the bottles. ;)
