So I know this carpenter who promised to make me a barrel out of white oak. Not sure how big it will be,but the staves would be a little over three feet long,so quite big. But how should I treat a new barrel, does it need some kind of seasoning before putting beer in it?

Most barrels are charred to a certain extent on their interior. But you'd need to play around with the amount to make sure you don't end up with charcoal on the inside.

Ideally, find a winemaker to use it for a year first.
There are only a few commercial beers made in virgin oak barrels. Odell Woodcut comes to mind.

Could I fill it first with water mixed with (cheap) red wine or something and let sit for a few weeks or something? To mellow it out even a bit.

Are you going to char it? If you want to and don't know how let me know I have done a couple recoops on my barrels. I can help a little.

Yes I think I will (should?) char it.

YES "should" is the correct answer here..LOL

If you need help let me know. I have done several. And there are a few steps you need to follow to make sure it will go back together and not leak. I actually think I did a small write up here somewhere about it. I'll try and locate it if you need/want help.

Cheers
Jay
