Hello, I just kegged a beer that the recipe says should age in the keg for 30 days at 65 F. What is the proper way to do this? I put it in the keg, purged the oxygen out and put it ander about 30 pounds and just put in my pantry(without the co2 connected), no where near 65 put pretty cool, 76ish...

Am I going to ruin this beer!?

Thanks!

That's how you do it. The warmer the temp the quicker the beer will age so you may want to adjust accordingly. I too often have to decide between aging at fairly high ambient temp or just sticking it in the keezer for longer. Ideally I'd like to age big beers around cellar temps (like 55) but I just don't have the space/climate for it.
