How much yeast for one gallon demijohn?

Hello

I have a 1 gallon Demijohn to which I am going to add 4litres of Princes apple and raspberry juice.

I have two questions:

1) how much of my 5g packet of champagne yeast should I add. It states the 5g is enough for 23l or 5 gallon so is it just 1g for gallon I add? (Reason is I also have a half gallon size and need to figure how much to out in that one)

2) How much sugar should I add (if any?) I want an end result of around 6%

Id split it half and half. 2. Should gennerally be close to that without adding more.
