How much will it mellow?

I tried one of my beers today. It has been in the bottle for one week. I know it needs longer conditioning time, but I wanted to taste.

It is supposed to be a Killians Red Clone. MAANNN is it bitter. I could only stomach a couple sips before I gave up, and fed the lawn with it.

How bitter can it be after one week, and still taste good in a couple more?
 
1 week? Is it even carbonated yet? It is good to test weekly till carbed...

Yes it will mellow... I made Cheese's CCA and it mellow to the point that the caramel and Vanilla are so, so slight... same with my porter and Irish Pale.... both conditioned better each week...
 
If it's a hoppy bitterness, that will certainly mellow over time. It may take a few more weeks, but bitterness from hops can be very strong at first and then mellow over the course of several weeks. It's certainly nothing to worry about.

I hope you are right :D cause it has a long way to go...whew I can still taste it

Too bad you dumped it out, you could have done some really good cookin' with it, hops add a pretty good flavor to food, Chilli, Stew, Stir-Fry.
 
I agree. Just like DeadYetiBrew, I made the CCA and the first month or so it was undrinkable, the vanilla flavor was so strong. Now, it's great - I gave one to my boss and he can't stop telling people about it.

I wish it tasted like vanilla...I can not even describe this taste.

Like you took a mouthfull of leaves and chewed them up with some flower petals and some lemon heads??? It'll settle give it time... if in 5 weeks it doesn't settle stick them somewhere in your house, forget them, and remember in 6 months...
 
Wow What a difference a little time makes!

That nasty old stuff that I couldn't stomach a short time ago turned out AWSOME!!!!

Smooth drinking and the only thing wrong it is the last swallow gives you a strong desire for another
