I wasn't paying attention when I made my EdWort's Apfelwein and made approximately 21 quarts of of Apfelwein rather than 20 (5 gallons). So will I be able to prime with the normal five gallon amount of priming solution or how much should I add to get it properly carbonated?

you are 1/20 more so add 1/20 x 3/4 cup extra which is about a tablespoon extra.
i wouldn't sweat it - i usually add 1 cup for 23 litres (6 us gallons) and get nice carbonation

One ounce (by weight) of sugar for each gallon will get the carbonation right where you want it. Doing it by volume is notoriously inaccurate and will give varying results.
