How much coffee and vanilla?

Ok so I'm going to be brewing my Christmas beers in the next few weeks. I am going to brew 3 different beer all will have the same base recipe(high abv bourbon stout) but one will be a coffee, one vanilla and one plain. I want the coffee to have a very pungent coffee flavor like coffee and cigarettes by cellermaker and same with the vanilla. So how much coffee and how much vanilla should I use for each?
Oh and they are both 5 gallon batches
 
Just my two cents: I did a vanilla stout recently and I tasted so weird and sweet I ended up dumping it. Then I bought a couple of commercial examples, and those were dumpers, as well. I love vanilla, but the vanilla beers I've made and tried have all been really gross. If you've tried commercial examples and like them, just chalk it up to my taste buds, though.

To me vanilla in a stout ends up tasting like cola, sweet and incongruous and gross.
