Can I rack off a US-05 cake today and dump a new batch in on Sunday? Same gravity beer.

Anything I should do to keep the yeast happy between now and Sunday?

Thanks.

I'd pour it into mason jars and store in the fridge.

I'd recommend only pitching about a quarter of the cake. That allows the yeast to reproduce fresh yeast and create esters. If you over-pitch, it will not reproduce and the old yeast will have to do all the work, and may not attenuate as well as it should.
