My kombucha brewed for 2 months, only planned on leaving it for one but a lot happened and here we are.

Is that still okay? Or was that too long and it’s not good to drink now? The scoby looks great still I just won’t want it to make me sick.

What happened during that extended time is it got more acidic. It is still safe to drink, will take a little less for use as a starter. What you did is basically make a large scoby hotel. I've found that the longer i let it ferment past prime, the less carbonation I get in secondary. I would bottle as is and use it as a mixer with juice, and put some in a cruet for vinegar on salads. And of course use some for another batch!

I did the same. 2 months and it looks like I have a deck of scobys. Should I keep and start a new batch or just let it go? It doesn't look moldy, but my gallon container is almost half full of scoby and looks like it needs more liquid. Thanks, sorry for the newbie question. LOL. I was so excited, and then boom, everything got cray. :)

I would make a new batch of tea and just reuse about 8 oz of liquid and the top scoby layer. don't be afraid to tear off the top if it won't just pull apart. The rest of the liquid should make a tasty vinegar substitute.
