I put a few ounces of orange and lemon zest (in vodka for two days first) in my ale on day 7 figuring the ferm would be done shortly and I could bottle on day 14. Well the Belgian yeast was still going after two weeks. It's settled down now, but I worry about how long the zest has been in there now. It's now been in there 13 days. I have to wait until Thursday to bottle... Should I be concerned?
