I know the answer is probably indefinitely but I forgot about a beer I cold crashed almost 2 months ago. Will I see any negative impact for not getting it carbonating sooner?
 
Should be fine, drag your syphon across the bottom to pick up some yeast when you transfer the beer for the "carbonating" phase.
 
Cold crashing for a longer length of time is just similar to lagering your beer. You should be fine for up to three months or so, or until autolysis sets in.
