I'm trying to Carb a stout and how do I k ow when it's done? I'm drinking a lot of beer for science lol but after your pour how long does your head last ? After head, how long does carb last? I'm kinda drunk lol hope this makes sense lol
 
Carbonation can be calculated, both bottle priming and kegging.

Sober up and do a search, lots of info and calculators for this very thing

The length of time for head retention is full of variables that it can not be determined consistently. The malt selection you choose, the amount of hops added, the volume of CO2 added, the temperature of the beer, etc. Basically, it's a science experiment that could take you years to understand. There are whole books written on the subject and still the foam on top of your beer is a mystery.
