I need to use up some hops, and I especially need advice on what to do with the first three. All are pellets.

Australian Galaxy - 11.6% (2014) - 1 oz
Falconer's Flight - 7C's - 10.3% (2014) - 1oz
HBC 438 - 16.6% (2014) 1 oz
These are all Hop Union 1 oz bags

I brew in 2.5 gallon batches, so these will go a bit further than they would otherwise. I need suggestions on what to do with them. I also have the following to work with.

Mosaic 11.3% (2015) - 16 oz (Yakima Chief)
Mosaic 12.3% (2015) - 8 oz (Yakima Valley)
Mosaic 12.3% (2014) - 5 single ounce bags (Hop Union)
I also have several ounces of 2014 Mosaic of unknown AA and origin. I think they were about 11%, and they have not been especially well stored. I'm thinking maybe a big dry hop...
Citra 14.1% (2015 - 1 lb (Yakima Chief)
Simcoe 11.6% (2014) 1 oz (Hop Union) (I plan to buy more of this)
Warrior 15.8% (2015) 1 oz (Yakima Chief)
Warrior 16.0% (2014) 1 oz (Hop Union)
Columbus 13.4% (2014) 1 oz (Hop Union)
Columbus 16.0% (2015) ~3 oz (Yakima Valley)

As you can probably guess, I loves me some Citra and Mosaic. How can I use the Galaxy, 7 C's and HBC 438 to best advantage? I'd love for someone to tell me a good way to use two or even all three of these in one brew, but I don't want to throw them all in the same kettle just because i do not know what else to do with them.

Well you could use the HBC-438 as a bittering charge and use the FF at 10 min and 0. This is how I used the Falconer's Flight. I used Galena for bittering.

Recipe Type: All Grain BIAB
Yeast: US-05
Batch Size (Gallons): 3.25
Original Gravity: 1.058
Final Gravity: 1.011
IBU: 38
Boiling Time (Minutes): 60
Color: 20 SRM
ABV: 6.1
Primary Fermentation (# of Days & Temp): 14 Days at 64 degrees

Grain Bill
7 lbs. Pale Ale
8 oz Munich 10
4 oz. Crystal 120
4 oz. Chocolate

Mash
BIAB Single Infusion mash for 60 minutes at 150 degrees.

Boil & Hops
.25 oz. HBC-438 16.6% @ 60 min.
.5 oz. Falconer's Flight 10.3% @ 10 min.
.5 oz. Falconer's Flight 10.3% @ 0 min
 
But you used Galena for bittering this recipe, right? I've not read a lot about 438, but from the little I've seen, I wonder if using 438 for the full boil might move me into catbox territory.

What about subbing some of my Warrior or Columbus for the bittering charge, and then splitting the 438 at 10 and 0 along with the 7Cs? Did you use FF in your recipe, or FF-7Cs?
 
Damn, I should have read closer.. Not 7C's just the other Falconer's Flight - sorry. Anyway looking at 7C's "Floral and Citrus" still sounds fine for later additions.

Well I searched for HBC-438 and seems late additions seem to be the preference, but a few used for bittering but in later additions like 30m, but yes not lots of info out there.

The Galaxy as a substitute for Citra line gave me all sorts of ideas about using it with some of my quantity of Mosaic, but I think I want to stay on the 438 line of thought for now. The recipe above calls for three ounces for five gallons, so if I add a second ounce when I pick up my grain bill, I should have plenty for a 2.5 gallon batch. It can never hurt to throw more into the dry hop.

Now for a grain bill, as the Northern Brewer recipe uses extract. I normally use mostly American 2-row in everything I brew, and I plan to use some again for a second brew this weekend (phase two of my Breaking Bud cloning attempt), so I want to do something at least a little different this time. But what? MO? Golden Promise? I am open to suggestions. I'd like to wind up with an SRM of about 6.0 and an ABV to match. I use RO water, and will probably go for the 2 to 1 chloride over sulfate ratio suggested for NE IPAs just because I want the rounder hop profile it offers. I have US-05 on hand, so that is easy, too.

Grain bill suggestions?
 
I just bottled a DIPA with 80% 2-row, 10% munich, 10% vienna using Citra and Mosaic. It included a 4 oz hop stand and 4 oz dry hop (both evenly split between the two hops). This is one of my regular brews. I love the combination of the tropical flavors in the citra with the resin in the mosaic. The aroma is great, too.

I do APAs rather than DIPAs, but that is pretty close to my go-to recipe as well. This weekend I plan two brews that do not follow this path, however; the 438 discussed here, and a Breaking Bud clone I've posted about elsewhere. I do love the Citra/Mosaic combo, however.
