In general those filters will have no effect on the mineral content of your water - the ions will sail right through them. The carbon filter will remove chlorine, chloramine, geosmine and other ogranics but these are not considered minerals. If the water is very high (for municipal water) in pH then some magnesium hydroxide or iron hydroxide (brown stain) or other metal hydroxides might deposit on the sediment filter and if the water is super saturated WRT calcium carbonate that might deposit as might silica under the right conditions.
