OYL says the fermentation temp range for this yeast is 70-95 degrees.
I made a Vienna/Cascade SMaSH and fermented it around 80 degrees in primary for two weeks in my kegerator.
Now that fermentation is done (confirmed by hydrometer tests) I'm going to dry hop it for 5 days then keg it.
I was just going to take the SMaSH out of the kegerator and walk it up to the garage and let it dry hop there. The weather is forecast to be between 82-87 today (sunday) thru next Thursday. Then it drops to 70 on Friday. My basement usually stays around 68.
While it is dry hopping, does the temp need to stay at 80 degrees since fermentation is done? If so what would happen if the temp went up or down especially below the minimum ferm temp of 70? Would temperature swings in the 80s hurt the beer while it is dry hopping?
The reason I'm asking is b/c I'm kegging up 4 gallons of root beer and I need my kegerator back so the root beer has a place to chill and carbonate and I don't want to risk screwing up the SMaSH by messing with the temperature.
