Here's a dumb question. Once you add bittering hops, do the oils ever boil off. And the same question goes for flavoring hops.

i don't believe they do, unless you boil for a really long time... i could be wrong.. but the longer the boil the more oils that are extracted from the hops into the wort. just the aroma dissipates that is why you have the late addition of hops.

No. The bittering resins are non-volitile. Flavor compounds are volatile, but less so than the aroma compounds.
