hops growing on a trellis

if i have a arched trellis and grow hops on one side of it will they grow up one side and down the other or will they reach the top and go whatever way they want.

My guess would be that you could get it to go down the other side as people have trained them horrizontally along a fence.

My mom has an arched trellis in her garden and the hops grow up the sides, then reach for the sky! They don't make it (silly little plants, they can't fly!) but if you trained them to grow down the other side I'll bet they would.
