I'm brewing up a simple IPA this weekend to try to use up some of my hops. Here's what I have on hand (don't need to use them all):

6 oz Cascade 6.9%
3 oz Chinook 11.8%
2 oz Magnum 13.1%
1 oz Hallertau 4.3%
1-2 oz Centennial
0.75-1 oz Calypso

I was thinking of using the Magnum for bittering and then a combination of Chinook/Cascade/Centennial for the rest. I'd like to get rid of the Calypso too and thought I could mix it with others for aroma/dry hopping. Any suggestions?

Also, I've never made an IPA. I was just going to take an easy pale ale recipe I've made a few times (6# Light DME, 1# Crystal 60) and up the hops. Any concerns with this? I've read about adding corn sugar to IPAs. Should I consider this? Thanks for the help!
 
Your pale ale extracts would work but I'd think you'd need to bump up the amounts a little so the higher ABV and maltiness can help support the hop bitterness and flavor. I think 9.5# Light DME, 1# Crystal 60, and 0.5# Light Munich would work quite well. You'd only need to use corn sugar if you expect your OG to be around 1075 or higher, OR if you have issues with under attenuating yeast since the whole purpose of adding sugar is to help finish the beer dry enough as to avoid it being overly sweet (FG should be around 1012).

As for the hops, I also usually go w/ Magnum for a clean bittering and Chinook, Cascade, Centennial seem great together as well. I usually go w/ combo additions at 10 mins left, 0 mins left, and dry hop (I usually dry hop w/ 1 oz total for pale ales and 2 oz for IPAs). Don't have any experience with Calypso though, hope this helps you!

The Munich needs to be mashed. It sounds like he's just steeping the crystal.
 
Brew two 1.065 OG IPAs with 6-7 oz. hops in each (don't use the Hallertau, or use it for bittering to drain the character). Use 1/2 lb. Crystal 60 and 1 lb. Corn Sugar per 5 gal batch. The only thing you'll need is more DME and more yeast. Your plan on how to use the hops seems good. With the little bit of Centennial and Calypso you have, I wouldn't mix them in both beers. Use them separately in the dryhop or flameout. Both IPAs should contain Magnum, Chinook, and Cascade though.
 
Thanks for the responses! I was shooting for a OG in the lower end of the range. 9.5# seems like a lot of DME. That puts the OG at 1.080 for just the DME. And I'd love to do two batches but that's not gonna happen this weekend. I'm already brewing two other batches (trying to pump out some brews for an Oktoberfest party).

It seems like there were differing opinions on the corn sugar but what about this:

6# Light DME
1# Crystal 60
1# Corn sugar

1 oz Magnum 13.1% (60 min)
1 oz Cascade 6.9% (15 min)
1 oz Calypso (5 min)
1 oz Chinook 11.8% (FO)
1 oz Cascade (FO)
1 oz Cascade 6.9% (Dry Hop)
1 oz Chinook 11.8% (Dry Hop)

Also, would 2 oz of Magnum be too bitter? I've seen some recipes with 2 oz of bittering but it seems like 1 is more the norm.
