I'm looking forward to making a hoppy semi-high gravity IPA and looking for help on timing hop additions. All pellet. Shooting for 1.072 SG

2oz warrior 16.7%aa (60 min)
1oz aus galaxy 13%aa (30min)
1oz nz nelson sauvin 12.5% (15 min)
1oz amarillo 9.3 (dry hop or flame out)

Should I use hop sacks or add pellets and then strain?

I am of the opinion that the Galaxy would be essentially wasted on a 30 min addition. You'll get a little flavor and no aroma from it. I would move the Galaxy to 5-10 mins. If you have it I would use 1 oz of Amarillo for an aroma steep and another ounce for dry hopping. If you don't, then I would aroma steep the 1 oz of Amarillo for about 30 mins. Once the wort is down to about 180 F, add the aroma steep hops and secure chilling water. After the 30 min, restart chilling. I personally use hop sacks, but there will be no ill effects if you don't use them.

I agree with nukebrewer regarding your galaxy. It'd be a shame not to feature that flavor. It should definitely be somewhere in the last 15 minutes of the boil. As to choice of pellet vs. leaf, I guess that depends on the availability of those hops, and how well you can keep the pellets out of your fermenter. I prefer leaf in a bag personally.

EDIT: I see now you have pellet only. I would still bag them in fine mesh.
