I have hops still sealed in their silvery oxygen-barrier bag that I bought probably about two months ago. I'm thinking about brewing this weekend. Should I trust that these hops are still ok, or buy fresher ones? Is there a way I can tell without opening the bag?

Considering hops are harvested once a year and used year round, two months in the fridge is nothing. Many noble hops are better when they have oxidized a little and are turning brown. Look up the hop in this page. The storage stability is for 65F.
