Looks like I'll be able to brew this weekend, so I'm thinking a Helles or similar light lager. I have a freezer full of leftover hops from previous batches and just want to use what I have.

From everything I can find, there seems to be a general consensus that hops used strictly for bittering purposes have little difference in terms of flavor. My concern is that I run the risk of using a hop that does impart slight flavor or harshness.

Here is what I have:

Cascade
Magnum
Perle
Northern Brewer
Amarillo

Any suggestions?

Magnum is pretty neutral. Some hops have flavor that carry through even if only used as a bittering addition. Chinook comes to mind.
