Will try my first all grain brew soon. Still a few things i'm not sure about preventing me from getting started.
Hops
Not sure how much to add and what the outcome will be, too bitter or not enough. Is there a guide or chart that will let me know the outcome of adding hops in AAU% to lbs malt? I know more malt needs more AAU% to counter the sweetness with bittering.
Also, I know to add hops at 60, 20, and 5 min intervals but at what ratio's?
Everything you just asked totally depends on the recipe you have. If you're developing a recipe, then I would go for a IBU level no higher than your OG...if you're shooting for a 1.060 OG, then make your IBUs 60 or less. Obviously less equals a sweeter beer and more equals a more bitter beer.
The higher the AAU% of the hop, the more bittering potential it has. 1 oz of 10% hops will have twice the bittering potential of a 5% hop.
The 60 minute additions are for bittering. Hops are isomerized most when boiled for 60 minutes, therefore extracting all the bittering from them. The 30, 15, 10, 5, and 1 minute additions are for flavoring and aroma. If you want a very hoppy flavor and aroma to the beer, then focus more on the later additions. f you want to bitter the heck out of it, concentrate more in the 60 minute addition.
There is a hops ratio chart on the boards that is extremely helpful in figuring out how many IBUs you want to get a sweet/moderately/highly hopped beer. Let me see if I can find it...

It's a poor man's BeerTools. Enter in the amounts of malt, hops, and water and it will tell you the IBUs and OG of your brew.
There are also mathematical equations around here somewhere, but I never learned em and I probably never will.
